How to record Streaming Audio & Video

I have been doing a lot of streaming Audio and Video recently and have never had a need to capture the Audio and Video but do now. Google has led me into some interesting sites and I have found 2-3 programs that seem to do a ok job. I would like your opinions on what you use and your experiences.
